Gluten-Free Baked Feta Spaghetti Squash Recipe


Optimum Wellness and Nutrition Health Coach and Executive Mom Nest advisor Amy Bowers created her own version of the viral TikTok Baked Feta Pasta that’s both healthier and gluten-free!


Amy uses spaghetti squash as a gluten-free alternative to pasta from the original TikTok recipe. Spaghetti squash is easy to cook, and a great way to incorporate wholefoods into this trendy recipe. She uses sheep’s milk feta which is more easily digested by our bodies, than cow’s milk. Goat cheese would also be a great alternative! Follow the recipe below to try Amy’s gluten-free twist on this viral dish.



Ingredients:


2 pints of grape tomatoes

1 oz block sheep’s milk feta cheese

¼ cup olive oil

1 tsp sea salt

Fresh ground pepper

¼ cup fresh chopped basil

1 large spaghetti squash

Basil for garnish or crushed red pepper (optional)


Directions:


  1. Preheat oven to 400 degrees

  2. Carefully cut the spaghetti squash in half. Scoop out the seeds and place the spaghetti squash, cut sides down on a large baking sheet (rubbed in olive oil).

  3. Bake for 20-30 minutes, or until it is soft and tender enough to poke with a fork.

  4. Remove From the oven and use a fork to scrape the strands from the inside of the squash into a bowl.

  5. While the squash is cooking, place the feta block in the center of a large rectangular baking dish. Add the tomatoes around the feta block. Drizzle with olive oil, and sprinkle with salt and pepper.

  6. Bake for 30 minutes, or until the tomatoes are bursting and the feta has softened. Remove from oven and add the basil. Stir, mashing the feta with the tomatoes, until well combined.

  7. Add the spaghetti squash strands and toss to coat well.

  8. Serve with extra basil and crushed red pepper.
